Easy Track Day Chicken Salad
1 pound smoked white meat chicken, shredded or cubed
1 cup chopped celery
1 cup red seedless grapes, halved
3/4 cup diced apples
1/2 cup roasted pecans, chopped
1 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Celery leaves, chopped (optional)
Server on some Kings Hawaiian Mini Sub rolls with some lettuce.
Make a couple of days before heading to the track and put it in a bowl with a good sealing lid. Keep cool in the cooler.
