The trackside chef
Ok boys and girls, it's time to share the wealth of knowledge on good viddles while at the trackside.
This just in - trackside fajitas. 3 or 4 large green and red peppers 2 very large sweet red onions (you can use yellow onions too) 1/4 cup veggy oil Sal & pepper to taste 6lbs of boneless skinless chicken breasts 2 packages of the below mix in the Mex isle of any Kroger or grocery. Chop/slice veggies up as you see fit, add oil and 1 packet of seasoning, salt & pepper and mix well by hand. Wrap tightly in heavy duty foil and place on grill until tender but yet crisp. Grill chicken until tender juicy while dusting with season mix from other packet. Do not use the entire package. After veggies are done, pull chicken off and dust with remaining season mix from package and lets rest for 5 mins. While chicken is resting, wrap about 50 soft tortilla wraps in foil and warm on the grill using "indirect heat" for 5-7 mins. While cool enough to handle but yet piping hot, grab a tortilla and spoon some veggies and chicken in the wrap and enjoy. i love this thread. i've brought my weber one touch gold to track on multiple occasions. i used the smokenator to do some ribs. works awesome, start the grill up right away when i get to track. get the temp going nice and low, and let the ribs sit in there for a 3-4 hours while monitoring the temp every so often. by the time lunch gets around, they are fall of the bone ready!

Blackened Chicken with honey grilled asparagus w/ Rye bread 1 Loaf of Rye Bread (or whatever bread you like really) 3-4 large, boneless, skinless chicken breasts 1 bundle of fresh asparagus from your favorite produce stand or the grocery if you must.... 1 bottle of honey (from your local bee keeper if possible) 1 teaspoon of salt (sea salt MAKES this go POW!) 1 shaker of my secret blackening powder Prep before leaving the to the track, make the blackening powder. In a zip lock sammich baggy mix the following and shake until well mixed (about 30 seconds) 2 tablespoons of salt 1 ½ teaspoon of garlic powder 1 ½ teaspoon of black pepper 1 teaspoon of white pepper 1 teaspoon of onion powder ½ teaspoon of cayenne pepper ½ teaspoon of paprika Transfer the mix into a shaker for transport Wash asparagus and place into zip lock baggy ready for transport/cooking Prep at the track Preheat grill to 500 degrees then turn down to med-high heat (375 degrees or so) Put chicken on grill and shake blackening powder onto chicken, how much is up to your taste Flip chicken and shake more blackening powder onto the other side of the chicken Finish cooking check until juices run clear When the chicken is about half way done, place asparagus on the grill and sprinkle with salt. (Ensure the raw chicken and asparagus never touch) The asparagus will take about 10 mins to cook tender crisp. (Do no put directly on flame) With about 2 mins of cook time left, drizzle some honey on the asparagus and roll to coat (Do not burn the honey, it tastes awful) When everything is done, serve hot and enjoy! I also updated the top post with the skillet sauce that was used to make the fajitas.

It actually never goes bad. Not just almost never. It will crystalize, but never go bad. I love honey.
Also, if you can work ginger into your diet, it's a great thing for skin, hair, and calming your stomach. Ginger and honey are also both delicious. Keep 'em coming chris! |

Pizza Grilled Cheese Ingredients 1 Loaf of bread (try different kinds of bread) Butter 4 mozzarella, sliced Pepperoni (cut in half or mini) Italian seasoning or basil Pizza sauce (for dipping) Prep at the track Warm a medium/large skillet over medium heat on the grill or use hot plate. Butter each piece of bread on one side. When skillet is hot, place a piece of bread butter side down on the skillet then add one slice of cheese and small shake of Italian seasoning or basil. Top with a desired amount of pepperonis (I used about 8 -10 whole regular pepperonis per sandwich) If any other toppings are desired, add now (onions, mushrooms, ect.. ect..). Add another slice of mozzarella and top with slice bread butter side up. When bottom slice is golden brown then flip over carefully. Once both sides are brown remove from pan cut and serve with pizza sauce if desired.

ham and cheese sliders
King Hawaiian dinner rolls your cut of ham swiss cheese or your choice poppy seed dijon mustard worcestershire sauce onion aluminum foil Melt butter in a cup on your grill. Throw in poppy seeds, dabble some worcestershire sauce, a squirt of dijon mustard. Roll up your ham, cheese, and sliced onion together and place inbetween roll halves. Put a sheet of foil on the grill. Put sliders on top of sheet. Drizzle butter conconction on of sliders. Close grill. If you don't have a lid, wrap the sliders in foil. Sliders are done with cheese is melted. apple pecan salad arugula baby spinach romain hearts candied pecans apple chunks slices of red onion balsamic vinegar olive oil dijon mustard syrup feta cheese In your bowl, plate, or cup: mix a dabble of mustard, and syrup together. Then a splash of vinegar and olive oil. Mix well together. Mix your greens, onions, pecans, and pieces of apples in a bowl or plate. drizzle dressing on top.

Easy Track Day Chicken Salad
1 pound smoked white meat chicken, shredded or cubed 1 cup chopped celery 1 cup red seedless grapes, halved 3/4 cup diced apples 1/2 cup roasted pecans, chopped 1 cup mayonnaise 1/2 teaspoon salt 1/2 teaspoon ground black pepper Celery leaves, chopped (optional) Server on some Kings Hawaiian Mini Sub rolls with some lettuce. Make a couple of days before heading to the track and put it in a bowl with a good sealing lid. Keep cool in the cooler.

Easy Italian Beef
A 1 gallon ziplock bag 1 small bottle of Wishbone Italian dressing 3lbs of your favorite cut of steak, I used NY strip 3 tablespoons of garlic salt Salt & pepper to taste Mix dressing and steak in bag, shake well and put in cooler before you leave for the track Grill at the track and serve with cooked broccoli (steam in foil on grill) and grilled pineapple. 0 track prep time and 15min cook time.

Any flavor Italian Sausage from grocery 2 Green peppers 2 Onions (any color) Grill the peppers onions in foil w/ 2 tbl spoons of Olive Oil Italian bread rolls (6+ inches rolls) Combine all and your good to go... If you want to go an extra step... Garlic butter the inside of bun (slightly toast it on grill) and add Mozzarella chz to sandwich (throw back on grill covering w foil till chz melts) ----------------------------- Pepper and Egg sandwich 2 green peppers (grilled in foil until soft) 1 12pk of eggs Scramble eggs like normal, when nearly done add peppers and fold in (like an omelette) Served on Italian bread rolls Last futzed with by EsrTek; June 30th, 2014 at 05:08 PM. |
