The slides in the caliper most likely need to be cleaned so the pad can move evenly.

The left side pad cannot slide over those non-lubricated and possible dirty/dented pins. The pistons push lower and separate the section of the pad that is closer to the center of the wheel away from the new rotor. Take a look at this: https://www.ninjette.org/forums/showthread.php?t=215332 The mechanic of that shop is wrong
