Chicken Mandy Rice (Arabic / Yemen Cuisine)

Mandy Rice

Ingredients

1) 3 or 4 table spoon of Mandy spice (you could get these in the local supermarket - i guess), dilute with water - about a cup of this mixture, or you may add several more tablespoon of this spice until the mixture is a bit thick.
2) 1 teaspoon of cloves
3) 1 teaspoon of star anise
4) 1 teaspoon of cardamom
5) 1 teaspoon of cinnamon (or you could use one stick (is it correct for the measurement??)
6) 1/2 teaspoon of salt
7) 4 tablespoon of tomato puree
8) 1 yellow onion (chopped)
9) 3 to 4 cloves of garlic (chopped)
10) chicken breast (diced)
11) 1 cup of chicken stock
12) 3 cups of Basmathi rice.
13) a pinch of salt.

Cooking

1) Wash the basmathi rice for several time. rinse it and soak it in water for several minutes.

2) Stir fry the yellow onion and the garlic until the smell arise. add the tomato puree and chicken and keep on stirring. Include all the spices such as cinnamon, cardamom, star anise, cloves and the mandy spice. Stir it until the mixture thickens (but do not let it fried too long or otherwise the spices will burnt and it will produce a bitter taste).

3) Add together chicken stock and stir it until the mixture started to thicken and bubbling (i do not really know what word to describe it.. lol).

4) Add mixture to the Basmathi rice (which you have soaked earlier) and you may start cooking your rice.

Note : The portion of the water should be a little extra than the measured rice. Most probably around 1 1/2 : 1 cup of rice. In this case, Basmathi rice tends to get mushy if you are using too much of water. However, the level of the water after mixing it together with the spice would look as if the ratio is 2:1. If this is the case, then the measurement is just nice for the rice to be fully cooked. Upon cooking gently (the rice would break if do it harshly) mix the rice so that the spices would be distributed evenly onto it.

The Chicken

Ingredients

1) 3 tablespoon of Mandy spice (this depends on how many parts of chicken you are cooking. For 4 to 6 parts, 2 tablespoon would suffice as other ingredients will also be added for the chicken flavour.

2) 1 tablespoon of chilli paste (depends on how hot you would want your chicken to be).

3) 1 teaspoon of cumin seeds.

4) 1 teaspoon of honey

5) 1 teaspoon of ginger

** all this ingredient is to be blended together and to be marinated with the chicken. The chicken could be cooked by roasting it or fry it. I prefer frying.

Harrah Sauce

Ingredient

1) 2 tomatoes.

2) 2 teaspoon of bird's eye chili (you may reduce the amount if it is too hot).

3) a pinch of salt

4) 1 clove of garlic.

** Blend all together.

Mandy chicken looks like the Chinese chicken I used to have in shinwar !!! That's some good stuff, I been looking for that recipe but with the wrong name it's been hard to find

How come ya can't grow?
No source this year for plants. We have a VERY short growing season in my town in Southern California due to our being the southern tip of the Sierras. Late freezes, we actually got a hail storm and light show last evening. And winter chills come early compared to the rest of the state.

Reapers take quite a while to come to maturity. Viciously hot, but great flavor. Im not too fond of Bhut Jolokia's flavor, to be honest. The Reaper is like its relatives, the Trinidad Scorpion, and 7 pot. Sweet and flavorful.

I think the salsa I had yesterday was reaper was tasty as can be, but it burned pretty good. We grew some "jalapeño" last year that I swear was the spawn of satan himself / them things weren't no jalapeños like I eve tasted before.

i will try the star anise with tea. I have always tried coffee with cinnamon stick and always with coffee, but never experimented with tea.

I will try to post some malay cuisine especially the ones eaten during festivals.

I drink way more tea these days than coffee. I put all sorts of stuff in my tea, cinnamon, ginger, cardamom, too much to list really

I've never had raw ones... The fried ones are some of the best things I've ever put in my mouth!!!

I like coffee, it's just easier for me to make tea; an gives me less jitters. I go space cadet on coffee

(Just looked up popia... Could even be better than lumpia)

Yep.. but i always find the ones ready made, sold in packets are far much more better, since you can go wrong if any of the ingredients out-measured the other. So just to play safe, the ones sold (if available) in the markets are easier to cook with.

My boss is selling those ready mix Mandy spices in a box. The best part is that it comes with all the things inside such as additional spices to be added to the rice including the basmathi rice itself!

I could help to get you some if you are interested. It is around five dollars per box. But you gotta help to pay the shipping cost + to check if this product is allowed to be imported to the states.

You must have been misinformed about the Mexican food, them folks put rice on almost every plate
It's soo good! They have one dish with rice, veggies, and some white cheese sauce, it's my favorite! (Or they make it with chicken an call it ACP (rice,cheese,chicken; but in Spanish which is why the name doesn't match the ingredients in English)

almost all local TV programmes on mexican cooking focused on taco, burito, tortilla.. seldom they broadcast those with rice!

That's just a small view on a screen man; You can get all the rice you can eat at any Mexican place I've ever been to! They put rice in some burritos, some tacos, there is a dish even called mexican rice, I'm sure if you check the Internet it will show you all about Mexican rice.

Black beans and rice recipe (from my mexican neighbor )

take black beans cook , Dump them in cooked rice , add any flavors / sauces you like... Time to eat.
It's tasty, works with all beans, and it's good for you, an simple!!! I mix all sorts of stuff into that and eat like crazy. It's good with meats, veggies, or just beans and rice

I sold my house and moved to Iowa. The new house is great but it was all original 1982. And the kitchen was a nasty mess. The original owner had left grain products when they moved out. The grain had weevils. So I was forced to gut the downstairs. The new house is very small but perfect for me as it has a nice shop attached.
The new kitchen and first floor is about to come together. I am doing most of the work myself to save money. And this is what it will look like when finished. I am very excited to get back to cooking.

I had to google what Weevils look like! Lol.

In Malay language, the bug weevil is the same name as fleas. Both Weevil and fleas are a common name in Malay (Kutu = cootoo). I have always called weevils as fleas... Thank you Eric for the new knowledge!

Nice looking kitchen there Eric once when it is fully finished. Would love to see the before and after picture for each work you have done. Are you doing it yourself? or are you appointing a contractor for this? --> Forget that I asked. Didn't read properly.

That is not my kitchen. But a photo my wife likes. So my plan was to build it for her so I can then cook for her. I like to cook and bake. So I designed the kitchen for my needs and she did is responsible for the look. We wanted a modern type of kitchen.

This is what I started with. I pulled it apart to try and clean out the bugs. We bought the hous online without really seeing it. We sold our hous in three days expecting it to tak two years and needed a place to live. Having a 130 lb African Mastiff means you can't rent. I did not know that.
