Haha, I know I've done the jack stand thing before.

Is is just me or is the ladder in the first pic bending in ways that it wasn't designed to?

It's designed like that. The last few feet bow outward to offer wider rungs at the bottom as well as, and more importantly, a wider base.

I like the ladder one looks pretty stable. Will probably do this to change my fork oil.

I have two triple-tree stands for fork service but I've still used the ladder method to swap swingarms before. Works great!
