Someone posted this on Facebook, and it sounds interesting, so I thought I would share...I think some chopped bacon would make a good addition as well

Potato Puffs


Ingredients

3 cups of mashed potatoes

2 eggs

1/3 cup sour cream (optional extra for serving)

1 heaping cup shredded sharp cheddar cheese

2 tablespoons grated Parmesan

2 tablespoons chopped chives or parsley

Salt and black pepper, to taste


Directions

Preheat oven to 400 degrees F. Lightly grease with butter 8 - 9 of the wells of a nonstick muffin pan. In a medium mixing bowl whisk the eggs then mix in the sour cream. Stir in both cheeses and the chives. Add potatoes and mix well. Spoon them into the pan filling the cups to slightly below the top. Bake 25- 35 minutes until they pull away from the sides of the cup and are golden brown. Remove from oven and let them cool 5 minutes in pan. Serve with sour cream if desired.

I made this yesterday (pretty easy) and I am going to make it again today, it was so delicious!

I don't really have a recipe, just went by instinct. Ingredients used: onions, butter, bell peppers, sharp cheddar cheese, 3 eggs, milk, salt and pepper. You can mix up the amount of ingredients to your liking. I wanted to add some deli meat and mushrooms, but I did not have any.

Yeah, I didn't have any of that atm, so I worked with what I had. This time around I used some tomato, but I put way too much pepper in, for my liking. All this talk, makes me want Machaca.

Some other folks were having a similar issue, and found that updating their XP boxes from SP2 to SP3 fixed the problem. Not sure what OS or browser you are using, but figured it was worth sharing.

thin sliced chicken breast marinated in soy sauce and garlic then grilled up over peanut oil with some peanuts so they soften up and onions to carmelize. an orange juice+peel, soy, garlic, ginger, honey and sugar sauce with some corn starch to thicken it up and vinegar and some cayanne to add a little pop. it's got diced green onions in the sauce. threw on some sesame seeds at the end i should have diced bell peppers and a habanero and thrown them in toward the middle. i cooked it in one pan, removed the chicken in the middle to cook the sauce and then put it back once the sauce is ready

here is my recipe for tacos, though I suppose these are more of a burrito than a taco...

Josh's Tacos

1 pound ground beef

1 can chopped green chiles

1/2 of a walla walla onion, diced

1 teaspoon fresh ground black pepper

1/4 cup salsa

1 can refried beans




Brown the burger with the diced onion, pepper, and green chiles, making sure everything is well blended. In a microwave safe bowl, combine the salsa with the beans and microwave for 2 to 3 minutes, stirring often. Layer the beans and burger in a 12 inch softshell tortilla. I usually top these with shredded lettuce, shredded colby jack cheese, tomato, and sour cream, but the toppings are up to you.

While it's by no means news-worthy, I'll be relocating in a couple weeks. We're moving back to Washington, specifically Kent, so hopefully I'll have an easier time finding a bike once we're there .

Here is one of my adopted daughters recipes:

"Enchilada" Casserole

1 family size of Nacho Doritos (crushed)

1 can of cream of mushroom soup

1 pound of ground beef

2 8oz. packages of shredded cheddar cheese

1/4 chopped onion


Pre-heat oven to 425

Brown the ground beef in a skillet, on medium heat. Add your chopped onion in the pan with the beef, cook until there is no pink. Then drain the grease from the now cooked beef, set aside.

Open and empty the mushroom soup in a microwaveable bowl, add half a can water, microwave for 2 1/2 minutes, stirring every 30 seconds.

In an 9 x 13 pan, make the first layer of the crushed Doritos on the bottom, cover with a layer of cheese, then beef as the next layer,then drizzle some of the mushroom soup over, coating eveningly. Then the layers begin again. Layer of crushed Doritos, cheese,beef, mushroom soup,crushed Doritos the last layer being a good helping of cheese on top.

Place into the now pre-heated oven until the cheese has melted. Let stand for 2 minutes, serve and enjoy a cost and family friendly dinner.

Sadly my wing sauce is just Texas Pete wing sauce heated and add flour till it at a thickness you like. I think it makes the sauce hotter but it may be all I my head. Lol

Next time I make it ill see how much I add.

melt a stick of butter on a skillet. put 1/4 tsp salt on top of the butter. once the butter has melted, mix in a cup of sugar and mix on med-high until the sugar is fully dissolved into the butter, turn the heat to low. mix in 1/3 cup of chocolate. real chocolate is better but you can use powdered cocoa. once it's a consistent mix, turn the heat off. add 1tbsp vanilla, crushed walnuts, half a cup of flour, mix well for a couple minutes while it cools down then add two eggs and a 1/4 tsp of baking powder. did i mention you should mix it well? butter up your 9x9 baking pan and then throw some flour on top of the butter before you pour in your mix. you can throw some extra pieces of hard chocolate on top once its evenly spread out. bake at 350 for 20-25 minutes or until people start asking when those brownies are going to be ready

you can put chocolate frosting on top too. if you do it when they are hot the frosting melts and creates an even coat and even melts down into the brownies a little bit

sure,

cut up trimmed chicken breasts into chunks, throw them in a bowl with a teriyaki chicken marinade (1 part salty (soy sauce), 1 part sweet (half sugar, half honey), 1 part sour (vinegar)- throw in lots of garlic, some black pepper to taste, just a little bit of paprika, and just a dash of some sesame oil. mix it well and then mix the chunked chicken into it and throw it in the fridge for an hour.

dice up large white or red onions, green and red peppers, and some jalepenos. take 1 slice of thick bacon for each 2 chunks of chicken you are preparing. cut the slices of bacon in half

to prepare your 'bobs, take a skewer and throw on the following:

onion, green pepper, jalepeno, chicken, folded up bacon... then repeat 3 times for each skewer.

throw it on the BBQ - indirect heat at first to get the chicken and veggies up to temp but then direct flame to char up the sugar on the chicken and the bacon and get a nice carmelization going on the chicken. flip it 4 times so you don't burn the surface more than a slight char. if you go too much the sugar burns and with the soy sauce combination it makes it tastes similar to cigarettes... so don't burn it.
